Chicken, Asparagus, Radish, Potatoes

Chicken

Farm Raised Chicken (I used skinless breasts)
Pure Virgin Olive Oil
White Pepper
Turmeric
Poultry Seasoning
Minced Onion
2 cans Cream of Chicken Soup*
3/4 can Milk

Lightly cover skillet with olive oil. Poke holes in chicken and place in skillet. Season to taste. Sear on both sides. Turn burner to med-low then add soup and milk, stirring in until smooth.

*This is not part of a healthy diet but it sure does taste good and made for a great gravy for the mashed potatoes I made as part of the meal. Some things I still can't resist. You can leave it out and the flavor will still be good. Turmeric has many health benefits! :) If you do leave it out, you probably want to leave out the milk, too.

Asparagus & Radishes

Wash and trim asparagus. Place on rimmed cookie sheet. Brush with pure virgin olive oil. Lightly cover with Sea Salt and Pepper. Place Radishes in between. Bake for 10-15 min at 350. If you like, place foil under asparagus for easier clean up. Keep in mind that recycling centers may only accept tin foil if it has been thoroughly cleaned.

Yogurt & Granola

1st breakfast

1/2 c yogurt*
1/4 c granola cereal

mix together - yum!  
*if using plain yogurt, which is healthiest by far, adding a bit of natural honey will curb the sour taste

Still hungry?

Have a little fresh fruit salad. I always have bananas on hand for my son and then I just add whatever else I happen to have - typically apples, oranges/cuties/etc, and hopefully some kind of berry, and pineapple

Eggs & Toast*

2nd breakfast

Eggs (you know what to buy, if you can)
Toast (whole wheat - not 'enriched' - or whole grain)
Tomato on the side

*It is my opinion that the high cholesterol in eggs (and I may be completely off-base, here!) is in large part due to the manner in which we prepare them. Making wise purchases and cooking in healthy ways - we use butter instead of oil, for example - can greatly decrease one's risk for disease. And we don't eat these foods everyday, of course.

Tacos with Homemade Taco Seasoning

tortillas 
light sour cream 
shredded cheese
salsa 
black beans (on side)
fresh onion, diced
2 cups chicken, cut into bite-sized pieces
Taco Seasoning
Sage Valley Blue Corn Tortilla Chips*
   *I'm not sure if these are GMO-free or not... the corn is organic, but who knows which oil is used? Apparently not the makers of the product, for it reads: "Expeller pressed Safflower, and/or Sunflower, and/or Canola Oil..." Doesn't Canoloa Oil have GMOs?


Taco Seasoning

I usually double or triple the recipe so I have plenty for later uses. I store it in a small jar with an airtight lid.
3 Tbsp/lb of meat or to taste

1Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp red pepper flakes (when I'm out of flakes, I just use plain old red or cayenne pepper)
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1 tsp sea salt
1 tsp black pepper

Fajita Seasoning

Dinner

Last night we used fresh sweet onions from the Farmer's Market  ($3 for a beautiful picturesque bunch) mixed with small potatoes and frozen (less expensive this way) broccoli on the side. Because my husband is a big meat-eater, we also had organic steak on the side (we picked up some steak and some ground beef for about $20 at the local farmer's market, which I gulped at, but it's the best prices around, considering). It was so lovely to fill my body with actual good foods, and to know my son is getting pure nutrients instead of GMOs.

Steak & Potaotes
2 steaks, grilled
1 sweet onion, sliced
4 golden potatoes, sliced
2 c frozen broccoli, seasoned to taste

Marinate steaks for a few hours, seasoned to your liking and grill. Season onion and potatoes then wrap in foil, shiny side IN, then place on grill for a little bit to soften. Steam broccoli in pot until it reaches desired tenderness. Serve. May top veggies with cheese for extra flavor or to help tots eat it!

*Common staples we use as seasonings are: butter (this is a good fat!), a bit of Sea Salt, Pepper, Garlic Powder (not Garlic Salt because it adds too much extra salt), Onion Powder (again not Onion Salt, for the same reason), and sometimes Oregano and Thyme, or Basil and Dill.*

*I haven't yet tried this myself, but how can you go wrong with coconut?? Let me know!
